Gluten Free Mac 'n' Cheese with Chicken and Bacon

Gluten Free Mac ‘n’ Cheese with Chicken and Bacon – This hearty gluten free meal is a family favorite dish in our home. The creamy cheese sauce mixed with the rotisserie chicken, shredded cheddar cheese and bacon gives this dish the best flavor.

Today I’ve got an easy recipe that you’ll want to add to your meal rotation ASAP. I love it when I find a new recipe that the whole family enjoys and asks for again and again. My kids LOVE Mac ‘n’ Cheese and could eat it for every meal. This recipe gives a little variety to the basic pasta and cheesy sauce. It’s so tasty! And I must confess that I feel like a super mom whenever I can sneak some wholesome protein in here and there.

I jump on any opportunity to involve my kids in the kitchen and this recipe is great one to get them involved with.  Whether it’s shredding the cheese or the chicken or breaking up the bacon pieces, it’s easy enough for them to help me. We use the Annie’s brand of Mac ‘n’ Cheese every time. I have tried both the regular organic pasta and gluten free pasta and they are both delicious.  The recipe can be used the same with either type of pasta. Prepare the Mac ‘n’ Cheese according to the box directions

Shredded Cheddar Cheese

Chopped Bacon Pieces

Shredded Rotisserie Chicken

Sometimes I make this meal in a casserole dish or other times I scoop the prepared pasta into individual onion soup crocks. It’s fun to have the kids make their own with the toppings they want.If you don’t have any soup crocks you should think about getting them. I’m always using them for something fun in the kitchen.
