TIPS FOR MAKING PERFECTLY SOFT COOKIES:
BUTTER ONLY: always, always, ALWAYS use real BUTTER! I know people love to substitute butter with all sorts of things to make it “healthier” but when it comes to the perfect chocolate chip cookie, you have to indulge. It’s the fat from the butter makes the cookie soft.
USE ONLY SOFT ROOM TEMPERATURE BUTTER: the moment you have the idea to make a fresh batch of homemade cookies set out your butter. Soft, room temperature butter is the real MVP in this recipe, without it you will have another flat hard cookie 🙁
ROOM TEMPERATURE EGGS: when you mix in cold eggs it actually shocks the butter and the consistency changes. So when you set out your butter, set out a few eggs along with it.
CHOCOLATE CHIPS: my tip for chocolate chips is that you can never have enough chocolate. Use semi-sweet chocolate chips, milk chocolate chips, chocolate chunks, white chocolate chips. You name it, if it’s chocolate USE IT! And lots of it.
VANILLA: using imitation vanilla is like buying a Michael Kors bag in Chinatown. One bite of the cookie and you will be able to taste the impostor so just splurge and use the real stuff. If you don’t have pure vanilla in your spice cupboard you can buy it here.
PARCHMENT PAPER: line your cookie sheet with parchment paper. I can tell a difference in the texture of cookie when I use and when I don’t. Plus, you don’t have to scrub your baking sheet. Just throw it away when you are done!
COOKIE/ICE CREAM SCOOP: if you want perfectly round cookies use this cookie scoop. Just scoop the dough and then level it off on the edge of the bowl then place the dough ball on the parchment paper. Is the cookie scoop necessary? No, but it sure makes the chocolate chip cookies look pretty.
